Tamarind /Chintapandu Pulihora


This is also a South Indian dish which is mostly made during festivals. My mom makes yummy pulihora . This dish always looked very much complicated to me. This time I seriously wanted to do this for sankranthi. The day before I noted down all the ingredients and procedure for tamarind pulihora. Strangely , Surprisingly, Amazingly wonderful and fabulous pulihora was made by me. Though it is the first time( I swear on god) it was really yummy. Still I need some hard work to put in..to make it the best. So lets note down the ingredients in moms style

Ingredients :
• 1 cup rice
• 2 cups water
• Lemon size tamarind
• 1tsp mustard
• 1tbsp chana dal
• 1 tsp urad dal
• 3 green chillies ( or can use according to ur spiciness)
• Salt to taste
• 1 ½ tsp turmeric
• ½ tsp hing / asofotida
• 11/2 tbsp peanuts
• 1 tbsp curry leaves
• 2 tbsp oil


Tamarind/Chintapandu Pulihora


How to prepare :

1. Soak tamarind in water for 1 hour before you make the pulihora
2. Take the pulp out of it.
3. Heat 1 tbsp oil in a pan.Add mustard seeds, when they start spluttering add urad
dal and chana dal and peanuts, till the dal turn golden burn and you hear
splutter of peanuts. Next add curry leaves .Keep them aside
4. Heat 2 tbsp of oil in the same pan, add tamarind pulp, salt , turmeric.green
chillies slit vertically length wise and hing. cook for 10mins till the oil
floats above the mixture.
5. In the mean time pressure cook rice with two cups of water. When rice is done,
allow it to cool down in a large plate/container and see that grains separate
from each other like fried rice, by mixing it slowly with a fork or a spoon
separate the grains
6. Add cooked tamarind pulp to the rice along with peanuts and urad dal..Mix it
properly
7. Delicous Tamaring Pulihora is ready. First offer it to god and then have it.

Please Note :
1. Peanuts and dals are added along with tamarind pulp and cooked but to have the
crispiness of the dals I used it separately.
2. Tamarind pulp can be increased according to your taste.
3. Green chillies can be added according to your taste

Aloo n Peas Pulao / Veg Pulao

A small celebration has been made at Home for the New Year Eve .Just me, K and Aashu. She just woke up few mins before the New Year and we cut the cake and rest of the time spent watching T.V. Though we were alone we had our own part of fun.On 1st of Jan I thought of doing something special at home rather than going out for lunch. Well so the Menu goes …….
- Aloo n Peas Pulao with Tomato raitha.
- Chole with puri.


Krish liked Pulao so much that he ended up licking his fingers…lol

What we need

- 2 cups of rice
- 2 big potatos cut into cubes
- 1/12 cups of peas
- Garam masala includes the spices ..6 cloves, 1 sp shah jeera, 1 bay leaf , 1
long
- cinnamon broken into pieces
- 1 sp of ginger garlic paste
- 2 tbsp of oil/ghee
- 4 green chilies
- Salt to taste
- 3 cups of water


Aloo and Peas Pulao


How to prepare

1. Wash the rice and add 3 cups of water to it.
2. Heat oil in a pan on low flame
3. Add all the spices (cloves,jeera,bay leaf,cinnamon) ad stir for 1min
4. Next add ginger garlic paste and stir for 30seconds.
5. cut the green chilies vertically and add to the mixture and stir it
6. Add potatoes, peas and stir fry for few minutes.
7. Add Rice with 3 cups of water to the mixture along with salt
8. Mix the ingridients properly and pressure cook it, till you get 2 whistles
9. Remove the lid and mix the mixture
10.serve hot with raitha

Vegetable Fried Rice


Fried rice is one of the dishes I always wanted to make. But I never took the initiative to learn the recipe. For the past few days I was very busy, tired and exhausted with Aashrita, did not get time to eat or cook properly. After a long time, thought of making fried rice. It took us only 30-35mins and it tasted amazingly beautiful with different colored vegetables and ummm……sooooooo delicious.You want to taste some? Its very easy to prepare. What you need is good mood and passion to eat.

Ingridients :

- ½ cup carrots chopped finely
- ½ cup beans chopped finely
- ½ cup peas
- 1 cup spring onions chopped
- 1 sp soya sauce
- 1 sp pepper
- 1 sp chilly sauce
- 1sp tomato sauce
- 4 cups of rice
- Salt to taste
- 2tbs oil
- ½ sp ajinomoto
- 1sp gingergarlic paste



Method

Cook the rice.(1 cup of rice 2 cups of water) Spread the rice on a plate, allow it to cool. Add little oil to it and mix it well so that each grain separate from each other. Another method is, keep the cooked rice in refrigerator for 1 hr.


Vegetable Fried Rice


1. Heat oil in a pan
2. Add ginger garlic paste fry till light brown
3. Add all the vegetables, put the harder vegetables first followd by the lighter
ones ( first carrots,peas,beans,spring onions)
4. Add salt, ajinomoto, pepper, 1sp chilly,tomatosauce,soya sauce to the mixture
and stir fry on low flame for 5mins
5. Add rice to the mixure amd mix it properly
6. Vegetable fried rice is ready
7. serve hot

Pudina Rice


Mint leaves( in Hindi pudina) is dark green leaves with pleasant flavour. Mint is grown all over the world. It comes in many varieties such as spearmint, peppermint etc, each with distinct flavour.It has an important place in Indian cuisine. It is used in variety of dishes like fruit salads, vegetable salads, salad dressings, soups, desserts, juices rasam, Sambar, biryanis ,chutneys etc.
when i was working in college i had this friend name sirisha. she is very good cook.She makes excellent rice dishes. She told me this receipe. Hey Thanks sirisha.


Ingredients:

• Cooked Rice 4 cups

• 1 bunch of Pudina leaves

• 4 green chillies (add more/less acc to taste)

• Garam Masala 1spoon

• Ginger garlic paste 1 spoon

• Onions 2 medium or 1 big

• Oil 2 table spoons


Pudina Rice


Procedure

1. Make a paste of pudina leaves and green chilies and keep it a side.

2. Heat oil in a pan, then add finely chopped onions, fry until golden brown

3. Add ginger garlic paste and then add grinded pudina & chilli paste.

4. Fry the above paste for few minutes and then finally add salt and garam masala.

5. Add the above paste to the cooked rice, mix it well.

6. Serve it with raitha
